Ingredients:
1 large mashed banana
1 tsp vanilla extract
1 cup coconut milk
1 cup gluten-free all-purpose flour
1 scoop of SoTru Vegan Protein Powder (vanilla, chocolate or vanilla chai)
1 tsp baking powder
1 tsp baking soda
1/4 tsp cinnamon
1 tbsp coconut oil
Shredded coconut to sprinkle on top.
Directions:
Mix milk, mashed banana and vanilla extract together. In a separate bowl, mix remaining dry ingredients. Mix the dry ingredients into the wet and blend together until combined.
Melt coconut oil in a non-stick pan over medium heat and pour a quarter cup of batter on to the pan. Flip once bubbles have formed.
Top with bananas, blueberries, honey, shredded coconut and enjoy!
