Apple Cinnamon Protein Muffin Bites

Ingredients:

  • 1 cup oat flour (or finely blended rolled oats)
  • 1/2 cup almond flour
  • 2 scoops PlantFusion Complete Protein (Vanilla Bean)
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of sea salt
  • 1/2 cup unsweetened applesauce
  • 1/3 cup maple syrup
  • 1 large egg (or flax egg for vegan)
  • 1 teaspoon vanilla extract
  • 1 small apple, grated (skin on for fiber)
  • 1/3 cup chopped walnuts (optional)

Directions:

  1. Prep the oven: Preheat oven to 350°F and line a mini muffin pan with parchment liners.
  2. Mix the dry ingredients: In a large bowl, whisk together oat flour, almond flour, PlantFusion protein, cinnamon, nutmeg, baking powder, baking soda, and salt.
  3. Mix the wet ingredients: In another bowl, whisk together applesauce, maple syrup, egg, and vanilla until smooth. Stir in grated apple.
  4. Combine: Add the wet mixture to the dry and stir until just combined. Fold in walnuts if using.
  5. Bake: Divide batter among muffin cups, filling about 3/4 full. Bake for 12–15 minutes, or until a toothpick inserted in the center comes out clean.
