Golden Pumpkin Oat Bars

These Golden Pumpkin Oat Bars are soft-baked, warmly spiced, and just sweet enough to feel like a treat. Pumpkin puree adds natural moisture, oats bring hearty texture, and PlantFusion Turmeric & Ginger delivers an anti-inflammatory boost.

 

Ingredients:

  • 2 cups rolled oats
  • 1 cup oat flour (or finely blended rolled oats)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground turmeric (optional boost for color)
  • Pinch of sea salt
  • 2 scoops PlantFusion Turmeric & Ginger powder
  • 1 cup pumpkin puree
  • 1/2 cup almond butter (or peanut butter
  • 1/3 cup maple syru
  • 1/3 cup unsweetened almond milk (or milk of choice)
  • 1 teaspoon vanilla extract
  • 1/3 cup dark chocolate chips or chopped nuts (optional, for mix-in or topping)

Directions:

    1. Prep: Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper.
    2. Mix dry: In a large bowl, stir together oats, oat flour, baking powder, cinnamon, pumpkin pie spice, turmeric, salt, and PlantFusion Turmeric & Ginger.
    3. Mix wet: In another bowl, whisk pumpkin puree, almond butter, maple syrup, almond milk, and vanilla until smooth.
    4. Combine: Pour wet into dry. Stir until fully incorporated. Fold in chocolate chips or nuts, if using.
    5. Bake: Spread batter evenly into the pan. Bake 25–30 minutes, until edges are golden and center is set.
    6. Cool + cut: Let cool completely before slicing into bars.
