Tropical Protein Chia Pudding with Mango & Coconut Flakes

Directions:

  1. Mix the base.
    In a medium bowl or jar, whisk together the coconut milk, protein powder, maple syrup, vanilla, and sea salt until smooth and well combined. Add the chia seeds and whisk again to distribute evenly.
  2. Let it set.
    Cover and refrigerate for at least 3 hours or overnight, giving it a stir after about 30 minutes to prevent clumping. The mixture should thicken to a pudding-like texture.
  3. Assemble and layer.
    Give the chia pudding a good stir and divide it between jars or glasses. Top each with a generous helping of diced mango, a sprinkle of coconut flakes, and a fresh mint leaf if you’re feeling fancy. Drizzle with a bit of coconut milk or dollop of plant-based yogurt if desired.
  4. Serve chilled.
    It’s creamy, cool, and summer in a jar.
